Natural glycerin is produced from high pressure splitting and trans-esterification of animal fats, coconut and palm oil. Another common food additive is citric acid that is produced by molasses fermentation. Both products require purification. When used in food, natural glycerin must be refined to eliminate color and odor-causing substances. Color bodies in citric acid must be removed prior to crystallization to produce an appealing white powder.
